Description:  

 

This position is responsible for planning, organizing, and directing the Kitchen staff in addition to quality food preparation in accordance with established standards.  The ideal candidate will have previous culinary, people management, and budgeting experience in a highly collaborative and communicative team environment.  

 

Responsibilities:

 

Oversees the daily operations in relation to hiring, training, and leading the Kitchen’s food production area to ensure that established practices and high standards are maintained, along with a diverse style of cuisine offered 

Assists in the planning and development of recipes, and correct preparation and presentation of all food items through production and demonstration, while maintaining a high level of quality and consistency

Provides daily oversight of the labor and expenses via effective work scheduling, budgeting and inventory control

Creates weekly specials and highly involved in creating menus for special events

Presents new dish ideas to Chef and open to discussing the aspects of the dish in a professional and constructive manner

Inspect all mise en place for flavor, consistency, quality and preparation in accordance with specifications

Ensures all stock and sauce production levels are maintained in order to have adequate amounts on hand for daily service

Maintains strict adherence to all core safety and food handling/preparation guidelines and procedures set forth by the organization and ensure quality standards are upheld by team members at all times.   Reinforces an environment that fosters quality food preparation and awareness.  Ensures all food is labeled.

Reviews the daily amenity program to ensure proper food delivery to specific Villa

Conducts daily team briefings including:  highlighting daily events, tee sheets, special requests, allergy concerns, preparation required for upcoming events, daily Villa occupancies, and any other pertinent information to ensure overall team success.    Regularly checks-in with team to ensure “guest ready” service at all times

Ensures and complies with sanitation standards as set forth by Scottsdale National, local, state, and federal regulations, as well as the cleanliness and organization of the Kitchen 

Supplies Chef with daily list of special products to be ordered (including pre-order items and food required for special events)

Maintains a constant line of communication with Chef and provides alerts of any unforeseen situations and/or employee counseling issues

Provides on-going training to Kitchen staff 

Sets a personal example of being a professional and thoughtful leader, and fostering a respectful working environment that is positive, accountable and productive

As required, delegates tasks as needed to ensure team’s efficiency and effectiveness

Completes other duties as assigned

 

Experience and Education Required:

 

6 previous experience in a culinary/food and beverage line position including hands-on experience in all kitchen areas:   Banquets, Garde Manger, Fine Dining, etc.,

2 years supervisory/operational/Lead Line Cook experience in a hotel, high-end resort or club environment

Strong desire to teach, train, mentor and inspire team

Hands-on experience operating food and beverage computer systems and culinarily production equipment and tools

Degree in Culinary Arts

Other:

 

  • Must be able to lift up-to 50lbs
  • Uniform is provided
  • This position will be exposed to various working conditions (both inside and outside).  Must be able to sit, stand, walk, reach, bend and kneel frequently and for long periods of time.
